L’autorité concédante souhaite confier au concessionnaire, à qui est transféré le risque lié à la gestion & l'exploitation du Restaurant Inter Entreprises & services associés. Le concessionnaire, qui supportera l’intégralité des charges de fonctionnement, investissement et d’exploitation, se rémunérera au moyen des recettes issues des usagers.
